Ingredients:

  • 3 tbsp vegan egg 
  • 1/2 cup unsweetened plant milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 6 slices of bread (preferably day-old bread)
  • 1-2 tbsp vegan butter or coconut oil
  • Maple syrup 
  • Shroomacon

Instructions:

  1.  Lightly coat skillet with cooking oil. Pre-heat skillet on medium heat. Place strips in heated skillet. Oil should be sizzling once strips are placed in the skillet. Cook on medium heat for 3 minutes on BOTH sides --- for a total of 6 minutes. Be sure to use a TIMER, not your eyes. While cooking, the strips will appear to be burning. Don't worry! They're just getting CRISPY. You will know cooking is complete, because your Shroomacon will be crispy, not chewy. Transfer strips to a paper towel-lined plate.  Let sit for 2 minutes, then serve and enjoy.
  2. In a mixing bowl, whisk together the vegan egg, plant milk, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Dip each slice of bread into the mixture, making sure to coat both sides evenly.
  4. Heat a skillet over medium heat and add the vegan butter or coconut oil.
  5. Once the butter or oil is hot, add the coated bread slices to the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  6. Repeat with the remaining slices of bread until all the French toast is cooked.
  7. Serve hot with maple syrup and Shroomacon, and enjoy!
