Delicious Vegan French Toast with Crispy Shroomacon
This vegan French toast recipe is a perfect breakfast or brunch option for those who are looking for a delicious and cruelty-free alternative to traditional French toast. Made with plant-based ingredients like almond milk and cinnamon, this recipe is not only vegan, but also packed with flavor and nutrients.
Ingredients:
- 4-6 slices of bread (day-old bread works best)
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1-2 tbsp maple syrup (optional)
- Vegan butter or cooking spray
- Toppings of your choice (e.g. fresh fruit, powdered sugar, vegan whipped cream)
- 3 strips of Shroomacon
Instructions:

Preheat a non-stick skillet or griddle over medium-high heat.

In a shallow bowl , whisk together the almond milk, vanilla extract, cinnamon, nutmeg, and maple syrup (if using).

Dip each slice of bread in the mixture, making sure to coat both sides evenly.

Melt some vegan butter in the skillet or spray with cooking spray. Place the bread in the skillet and cook for 2-3 minutes on each side, until golden brown.

Repeat with the remaining slices of bread, adding more butter or cooking spray to the skillet as needed.
- Cook the Shroomacon until crispy then remove and set aside.
- Serve the French toast hot, topped with your favorite toppings.
